In 2020, chef and culinary professional Callum Irwin achieved a major milestone in his career by winning the inaugural Ken Hom – Lee Kum Kee Scholarship, a prestigious award recognising emerging talent and leadership within the global food and hospitality industry.

Awarded to a single outstanding graduate, the scholarship celebrates excellence in culinary education while encouraging a deeper understanding of Asian food cultures and international hospitality. Callum was selected from a highly competitive field, standing out for both his academic achievement and his thoughtful, forward-looking approach to the industry.

A graduate of Ulster University with a First Class Honours degree in Culinary Arts Management, Callum impressed the judging panel with a detailed consultancy report addressing real-world challenges faced by Chinese and Southeast Asian restaurants. His work demonstrated not only technical knowledge, but also cultural awareness, commercial insight and a clear passion for learning beyond borders.

Callum’s success was already evident during his placement year, when he worked at Belfast’s acclaimed The Muddlers Club, contributing as part of the kitchen team during the period in which the restaurant achieved its first Michelin star. Alongside his professional kitchen experience, he has been actively involved in industry outreach, serving as an ambassador for Springboard NI and supporting widening-participation initiatives aimed at inspiring the next generation of hospitality professionals.

As part of the scholarship, Callum was set to undertake an immersive experience in Hong Kong, one of the world’s most influential culinary destinations. The opportunity offered the chance to explore Asian food traditions at source, engage with international chefs and industry leaders, and gain invaluable insight into global hospitality practices — experiences set to shape his cooking philosophy and career direction.

The scholarship panel praised Callum’s curiosity, drive and commitment to continuous development, identifying him as a chef with the potential to make a meaningful impact on the future of the industry.
